Korean cauli-beef

Time: 2 minutes prep, 20 minutes cooking Servings: 4-6


This is a grain-free twist on a traditional Korean beef & rice dish that's just as satisfying (and less inflammatory) than the real thing! It's sweet, savoury, and just a tiny bit spicy - the perfect combination of mouth watering goodness in a bowl. Did I mention it comes together in 20 minutes or less. Hope you love it!

What you need to make it:
  • 1 lb lean grass-fed, ground beef

  • 3 cups cauliflower rice (I used a pre-diced bag but you can dice it yourself too)

  • 1 tbsp olive or avocado oil

  • 4 green onions

  • 1 white or yellow onion

Sauce ingredients:

  • 3 cloves garlic, minced

  • 2 tbsp coconut or date sugar

  • 2 tbsp sesame oil

  • 1/3 cup coconut aminos (or gluten-free Tamari)

  • 1/2 - 1 tsp red chilli flakes, to spice level taste

What to do to make it:
  1. Dice green and white or yellow onion

  2. Add olive or avo oil to large frying pan, add onions and saute until translucent

  3. Add all sauce ingredients to a small bowl and mix well

  4. Add ground beef to large pan with onions and cook until brown throughout (about 15 mins)

  5. When there's 5 minutes cooking time left on the beef, add diced cauliflower to the pan

  6. Add sauce to pan and mix well just before serving. Enjoy!
