Dairy-Free, Gluten-Free Anchovy Pasta

This is my favourite pasta dish BY FAR. I feel like I'm in a villa on an Italian hillside every time I eat it. :P It's rich and salty, everything you want in an authentic Italian pasta dish. I say authentic because my Italian BFF's mom is the one who got me hooked on it many years ago - I just had to recreate a DF, GF version!


Disclaimer: the one cheese I do enjoy once in awhile is wild buffalo, so there is some wild buffalo asiago sprinkled in the photo. If you can have cheese, go for it but trust me - it's honestly even more delicious without.

What you need to make this dish:
  • 1/4 cup extra virgin olive oil

  • 1/4 cup diced anchovies (I use jarred)

  • 1/4 cup pasta water

  • 1 clove of garlic, minced

  • Gluten-free pasta of your choice, cooked according to package

  • Red pepper flakes (optional) and pepper, to taste

  • Fresh arugula for serving on (optional)

What you need to do to make this dish:
  1. Cook pasta according to package

  2. Dice your anchovies and add them to a frying pan with your butter on low heat.

  3. Add minced garlic and black pepper to your pan. Stir frequently on the lowest heat setting.

  4. Reserve 1/4 cup pasta water before your drain pasta.

  5. When pasta is done cooking, add it to your pan with sauce, add your red pepper flakes and a bit of pasta water until everything reaches a creamy and buttery consistency. Serve on a bed of fresh arugala and enjoy!
